Every winter the same problem. Kazy must be made with beef (I say this for the visitors). In Chicago the casings come from a Polish butcher and the beef from a Bosnian one, and the Polish man thinks we are making a strange kielbasa. Where do you all get your supplies?

Kazy from a Polish man and a Bosnian man. This is how a nation dies. In a sausage.
WAKE UP IRAD. |

Halal butcher in Scarborough. He is Afghan and he understands everything without explanation. He calls it "Irad sausage" and now it is on a sign in his window.

Bumping to answer Ak a year late.
Laghman was invented by Uyghurs, perfected by Koreans and eaten by Iradis. Food does not have a passport. Neither do most of us. |

Moscow has everything. Uzbek plov everywhere, Kyrgyz cafés. But Iradi plov, the creamy one? Nobody. I explain it and they think I am describing risotto.

Mrs. O's plov at the Association is exactly that one. Visitors call it risotto. She has stopped correcting them. Now she only looks at them.

Attempted beshbarmak in Columbus tonight. Hand-cut noodles, beef, onion broth. My wife said it was "like a hug". I ate with my hands like the video. Then I read about the horse thing and spent an hour making sure I used beef. (I did. It was from the grocery store. Very beef.)
Found you through a song. Live it up, look ahead. |

TD, you're more Iradi than me now. I'm going to go call my grandma about kazy.

Houston: found kurut at a Kazakh shop near the medical center. Wrong salt. Ate the whole bag in one shift.

In the camp canteen I asked the cook from Osh to make kazy. He looked at me like I asked for his kidney. Took him three weeks. It was good. Don't tell my mother, she thinks only she can.
Two weeks on, two weeks off, always cold. |

Kazy season begins. This year the Polish butcher's son runs the shop. He asked if we still want the "strange kielbasa" casings. Some things are inherited.
